My Love Affair With Queso Dip

Have you ever had Queso before? I only got my first taste of it a few years ago when I met my husband. You know the cheese in jars next to the salsa in jars at the supermarket? It’s the real version of that and it is so, so tasty. Fattening and horrible for you, but so, so tasty. You can dip anything you want into it, I usually just stick with tortilla or potato chips. Pour it over baked potatoes, eat it with a spoon, do whatever you stomach desires.

The best one I have had so far was in San Antonio. No clue how they made it, but it doesn’t taste like the typical Velveeta and Rotel mixture that Texans make at home. They must have concocted their own combination of cheeses to get the ridiculous flavor their Queso had. I could eat an entire bowl of Queso, no joke.

If you want to go the easy route, all you have to do is melt a small can of Rotel and cubes of Velveeta (16 oz. package) together. You could do it in sauce pan, a slow cooker, double broiler, just get the sh*t to melt.
