Healthy-ish Apple Muffin Recipe
After coming home from picking apples, and bringing back home not just apples, but apple cider doughnuts and apple pie too, I noticed we had some lackluster apples from the supermarket on the counter that I knew we wouldn’t eat fresh, since fresh-picked apples taste so much better! So I chopped them up to make some muffins since I’ve been craving them all of the time now. I added in some oatmeal and chia seeds to make it a touch healthy, versus just an indulgence. Love the pops of crunch that the chia seeds added. They reminded me of poppy seeds. I didn’t measure everything, so some things are just estimates.
Heat oven to 425 degrees.
Put cupcake liners in a cupcake pan.
Ingredients
2 large apples, peeled, cored, and diced. I squeezed lemon juice over it and tossed
1 1/2 cups flour
1/2 cup quick oatmeal
Lots of sprinkles of cinnamon, maybe 1/2 TBS
A few shakes of nutmeg
1/2 cup plain yogurt
About 4 oz of melted butter
1 1/2 cup sugar
2 eggs (whisked)
I think about 1/4 cup good maple syrup
Dash of vanilla extract
Chia seeds, I just poured it in, but 2 TBS should be good
Now What?
Mix all of the dry ingredients together, then mix in the wet ingredients, except the apples. Add in the apples last and mix well again.
Use an ice cream scooper to put batter in the cupcake liners. It should hit below the top of the cupcake liner.
Bake for 12-13 minutes.
When the top is browned, stick a toothpick in a muffin and make sure it comes up clean. When the toothpick comes out clean, then they are ready to be taken out of the oven.
