Snickers, Peanut Butter Cream Cheese Cake Recipe
I love no-bake cakes. They are so easy to make, but pack a ton of flavor here still. For P’s first birthday cake of the weekend, I made a Snickers ice cream and peanut butter cheesecake. Are you ready?
-15.5 OZ bag of Oreos
-28 OZ of softened vanilla ice cream
-4 TBS of melted butter
-11.1 OZ bag of Snickers
-1 cup of peanut butter
-8 OZ of Cool Whip
-8 OZ of cream cheese
-1 cup of confectioners sugar
Butter a springform pan. Line bottom with parchment paper. Butter parchement paper. I don’t know the size of my springform pan, but any cake size one will do.
Blend 25 Oreos into crumbs. You could also put into a bag and crush with a rolling pin.
Mix melted butter into crumbs. Press onto bottom of springform pan to form the bottom crust of the cake.
Cut Snickers bars into chunks. Take a handful and keep to the side.
Mix in with the softened vanilla ice cream. Mine was way too soft because I put it over the dishwater by accident and the heat from the drying cycle melted it too fast, which in turn made me have to work very fast. I also melted my candy bars this way too. Sigh.
Layer your ice cream mixture on top of the Oreo crust and pop into the freezer.
Mix together confectioners sugar, peanut butter, cream cheese and Cool Whip until smooth and well blended.
Blend rest of Oreos into crumbs, or use rolling pin to crush.
Take ice cream layer out of freezer. Press rest of Oreo crumbs into it to form another layer.
On top of that, layer the peanut butter concoction.
Decorate top with rest of Snickers and pop back into freezer.
When you are ready to serve, pop springform sides off of pan and that’s it!
It’s such a rich and addicting cake. There are so many different textures. You get two types of crunch from the Oreos and frozen candy bars. And then you get two different types of creaminess from the ice cream and peanut butter cheesecake layer. Be sure to try this recipe out for any upcoming get togethers.
