My Amaranth Plant is Ready for Cooking!
Don’t forget! You can cook amaranth and use it as you would spinach.
So with the batch that was grown enough to use this time around, I rolled it up and cut it into small strips. I ended up with 2 full cups. In a small pan (amaranth also shrinks up really small like spinach does when cooked) I heated up olive oil and threw in sliced of 3 garlic cloves.
After about 30 minutes of the garlic cooking, I threw in the amaranth and kept it tossing it around the pan till it cooked down, which took about a minute and then I ate it…all of it.
