Mashed Potato Quesadillas

I was craving a little bit of everything the other night, so I decided to make a mashed potato quesadilla.


Mashed potatoes ( how much depends on how many you make)

Shredded cheese (I wanted cream cheese, but cheddar cheese would be best)

Tortilla (can use small or big ones)

Any condiments that you want to add to it, hot peppers, salsa, sour cream, guac, etc.

Now What?


Heat up the tortilla in a pan. After it’s heated through, spread your mashed potatoes on one half, but leave a 1 1/2 inches free (the filling will spread when you cut it). Sprinkle with cheese and fold the other half of the tortilla over. When the side that’s down is toasted, quickly flip the entire thing and toast the other side. Cut and serve.
