Low-Calorie Crustless Quiche Recipe
I love me some quiche, but not how caloric it can be. But I figured that if I just cut out the crust, I’d be saving a ton of calories, but still be getting that great flavor.
Cut up broccoli florets
Big splash of whole milk
Small handful of parmesan
Small handful of mozzarella
Butter/oil a cake pan (around 6”) or a muffin pan.
Heat oven to 350 degrees.
Beat eggs and then mix in all the other ingredients. Pour into cake pan and bake for about 10 minutes, or when the eggs have set.
Let it cool down a little, run a knife along the edges and pop the sucker out onto a plate.
Bonus? This lasted me for dinner, and then an extremely hearty late night snack. I’m going to guess that the entire thing was under 400 calories and if you were serving it for dinner, it would be a very decent size for 2 adults.
The side that I’m eating with it is sautéed kale, but I let it cook longer to burn and crisp up a little bit.
