Healthy Vegetable Quinoa Bowl
O.K., so maybe I’m heating up a slice of New Park pizza in the oven while I’m writing this post about a healthy, vegetable quinoa bowl. But you probably knew that already. What surprised me about this dish is that it’s really good. I literally just used whatever veggies I had lying around and when I took a bite, it was incredibly flavorful. Now the problem is that I did the usual Juice thing and don’t have a written down recipe, but I think that this is how it went:
Ingredients
½ TBS olive oil
½ TBS butter
½ beet cut into chunks
½ yam cut into chunks
1 celery stalk sliced the short way
½ onion diced
½ tomato
Broth (Chicken, vegetable, any will do. If you don’t have, water is fine.)
Now What?
Sprinkle the tomato with oil, salt, pepper and roast in the oven at 350 degrees for 10 minutes.
Cook as much quinoa as you want in the broth. Follow instructions on your quinoa bag.
In a small pan heat and mix the olive oil and butter together. Toss in the beets, yams, celery and onions. Sauté until everything is cooked through.
When the quinoa is done, throw in the sautéed vegetables and mix.
Top with the roasted tomato and serve.
