Healthy Chicken Larb Recipe
I get so tired of eating certain meats when I’m getting lean again, so lately I’ve been really digging into my spice rack and my condiments. This time around I decided to go with a healthy version of larb, with what I was able to find in my fridge. Really flavorful and bold, this healthy chicken larb recipe will definitely be made again later this week. You get hits of lime, salty and spice. So nice.
Ingredients
Red onion diced
2 garlic cloves
1 lb ground chicken
Chicken broth seasoning for 2 cups of water
2 cups of water
Chopped pickled jalapeno peppers (can use fresh, or fresh chili pepper), small handful
1/8 cup of fish oil (use less if not mixing with rice)
1 TBS of sambal
1 1/2 TBS lime juice
Pinch of sugar
Few sprays of oil for pan
Now What?
Spray pan with oil. Sauté red onion until slightly translucent. Add in chicken and break up into small pieces till cooked through. Pour in water, chicken broth seasoning and mix. Cover and simmer on medium for 10 minutes.
While that is going on, mix together fish oil, sambal, lime juice, sugar and chopped jalapenos.
When 10 minutes is up, pour in fish oil mixture. Mix well in pan. Cover and simmer for another 5 minutes. Most of the liquid should be boiled off.
Serve over rice or in lettuce cups.
I like eating it mixed with rice and then served in lettuce cups.
