Pork Belly Recipes Part Deux!

If you didn’t see my last pork belly recipe, click on the link at the end of the post. It’s for a tasty and very easy, deep fried pork belly recipe.

The recipe in this post is actually very light in taste, but still flavorful. The fat from the pork goes extremely nicely with the sticky rice in this recipe. It is inspired by the ZongZi, which is a bamboo leaf wrapped sticky rice dish that I absolutely love. ZongZi is extremely complicated to make and at this point in my life I haven’t made them myself. An auntie of mine, one of my mother’s best friends, makes the best ones. She stuffs hers with fatty meat, salted duck yolk, chestnuts and Chinese sausage.

Ready?

Ingredients

Half a slab of pork belly, cut lengthwise and then into chunks

1 scallion stalk, broken up

1 TBS rice vinegar

1 pinch of sugar

1 pinch of allspice

1 slice of ginger

Soy Sauce-I didn’t measure, just put in a few glugs of it, maybe 1/3 of a cup?

Water-For the pork belly I maybe used 2 cups, for the rice I used 3.5 cups

2 cups of uncooked sticky glutinous rice

5-6 reconstituted shitake mushrooms cut into slices

Now What?

In a small pot, put in 2 cups of water, scallion, vinegar, sugar, allspice, ginger, soy sauce and pork belly. Bring to a boil for 10 minutes and then cover and simmer until there is only a little bit of liquid left. Pull out the pork belly.

Mix the pork belly, mushrooms, rice and 3.5 cups of water into a rice cooker.

When that’s done cooking, mix everything together very well and serve.
