I got home late the other night and was completely restless. Then I occupied myself by frying mashed potatoes. WIN! Each little fried patty tasted like a ginormous, delicious French fry. Sometimes I have good ideas.


1-2 cups of leftover mashed potatoes

1 TBS flour

Half cup of cornstarch

Enough canola oil to fill about an inch in a pan

Now What?

Heat oil in a pan.

Form 2-inch balls of mashed potatoes and then flatten them to half the size into mini patties. Dip each patty into cornstarch and then fry until bottom is golden brown. Flip and then fry until other side turn golden brown.

Drain on a paper towel.
