Chef Nicholas Porcelli at La Caverna

It’s been years since I’ve been to La Caverna. The last time I was there was for cocktails at a birthday party. Recently it’s been put on my radar again when I heard that Chef Nicholas Porcelli would be creating a new menu for them.

 

Handsome fella ain’t he? Well put it back in your pantyhose ladies because I’ve said it before and I’ll say it again, he’s taken. You might recognize him from a previous post I did. He has also since appeared on Chopped. And while a lot of chefs on that show have big heads, Nicholas was a breath of fresh air because he was so gracious and down to earth during his appearance.

Back to La Caverna. I actually missed a dinner I was suppose to have there due to a delayed trip back from Texas, but I wanted to still share some pictures of Nicholas’ menu that were sent to me. Pretty fancy looking, huh?

 

I’m dying to try the Market Greens (and usually I don’t like paying for salads) and the PBJB dessert. Check the full menu below to see what the PBJB is because it sounds fan-freaking-tastic.

  • Nick Porcelli is an absolute fraud. His culinary skills are ok. His management skills are abysmal. He has hired people for restaurant and catering gigs only to not pay them the money they were promised (this has happened to three people I know). If you are thinking of starting a restaurant or need consulting services, do not hire this man. Hire him if you need a chef (at your own risk) but he is incapable of being an effective manager or consultant in the culinary world.
