Brown Sugar Oatmeal Chocolate Chip Cookies

After I saw all these damn cookies on my Facebook feed, I had to make some cookies.

Super easy to make, I just threw a bunch of ingredients into my mixer, baked, and out came these delicious cookies. Also, they are brown sugar cookies because I ran out of granulated sugar. The edges have a crisp to them, but the rest is decadent and chewy.

This recipe made 17 cookies, but I eyeballed some of it.


1 stick softened butter

1 cup brown sugar

Chocolate chunks, I think I used about a cup

Big sprinkle of cream of tartar

Big sprinkle of baking soda

Pinch of salt

1 cup of all-purpose flour

1 cup of oatmeal

1 egg

1 count pour of vanilla extract

Now What?

Heat oven to 350 degrees.

Grease a cookie sheet.

In a stand mixer, mix the butter and sugar until it’s nice and fluffy. Add in an egg and vanilla extract. In a separate bowl, mix together the flour, cream of tartar, salt and baking soda. Pour that into the butter mixture and make sure it is mixed well together. Add in the oatmeal. Take the bowl off the mixer and then hand mix in the chocolate chunks. Roll a spoonful of cookie dough in your hands. I think mine were about 1.5 inches wide. Place the ball on the greased pan and slightly, just slightly, press it down. Repeat until all the dough is gone, making sure to leave 2 inches all around the cookies. Bake for 10 minutes, give or take a couple of minutes, since ovens are different. Take it out once the edges are lightly brown and the center no longer looks jiggly. Let it cool in the pan before removing and eating, because when it comes out straight from the oven, it will be extremely soft.
