Beer Beef Stew Recipe
It’s winter. All I seem to want lately are stews, soups and cognac. They are warm, filling and hearty. The other night I made a batch of easy beef stew that was tender and hearty.
1 LB beef chunks/stew meat
Half bottle of beer (whatever you like to drink)
3-4 potatoes cut into chunks
2 jumbo carrots or 4 regular ones
½ large onion diced
½ TBS butter
½ olive oil
1 bay leave
Salt to taste
Fresh cracked pepper to taste
2 cup beef broth
2 large garlic gloves crushed
Melt the butter and oil together in a pan that will be large enough to hold all of the end stew.
Sear your beef chunks on all sides till nicely browned. Take out beef chunks and keep on the side.
Throw in garlic and onion. Saute onion till see-thru.
Pour in beef broth and beer. Scrape the bottom of the pan off and throw meat in. Bring to a boil and simmer for 30 minutes. Toss in potatoes and carrots and simmer for another 30-45 minutes.
Whenever it looks like it is getting too dry, just pour in half a cup of water at a time.
Serve and that’s it.
