Once every six months, my body craves zucchini pancakes. It was one of those things that I watched my grandmother make while I was growing up since she grew zucchinis in the backyard. Definitely a fun and different way to incorporate this vegetable into your cooking. and of course an easy recipe since I’m all about easy recipes.
1 zucchini (I had a green one)
2 eggs scrambled (I like mine eggy, if you don’t then just use one egg)
1 1/2 TBS flour
Big pinch of salt
Big sprinkle of fresh cracked pepper
Oil to coat a pan
Grate your zucchini and squeeze all the water out. I do this by wrapped it up in paper towels and squeezing.
Then mix this with the eggs, flour, salt and pepper. Heat up your oil in a pan.
When it’s ready to start cooking up some food, form 2-3 inch patties with your zucchini mixture (if it’s too runny to form a patty that will hold up from bowl to pan, then slowly mix in more flour). Put your patties in the oil.
When they brown, flip it. When they brown on the other side, serve it.
